An apple a day keeps the blues away

There's nothing like #foodhappiness in this world. For those of you who have ever been wondering what this bringing people together mood is about, my motto that is, well it is nothing but that peculiar grin on people's face right before they taste a dish. It implies the mistery and opening of spirit in front of a new adventure (it being food or life oriented). It's a joy that overwhelms each and everyone of us three times a day (to say the least), it's what brings us all together chatting and making the world again in the company of acquaintances, loved ones and family members all through our life around a table. In the Italian culture, one individual is not fairly acquainted to another nor is he/she entitled to an opinion about someone unless they enjoy a meal together. Take the apple, for example, some say that one a day keeps the doctor away. I say that the more uses we can find to an apparently everyday object, the more confidence and attachment we will get to it. This creamy apple pie is a delightful option for turning your early morning bed sickness' blues into a ride of joy.

Creamy apple pie

Serves 8 people 500 g. of golden apples 250 gr. plain white flour 200 g. cream cheese 2 free-range eggs 100 gr. dairy butter 250 gr. brown sugar 50 g. icing sugar 8 g. of baking powder 7 cloves butter and flour for the mold a pinch of salt

Pre-heat the oven at 180 degrees. Peel 400g. of the apples, remove the core, cut them into cubes and cook them for 10 minutes with a ladle of water and a clove. Remove the clove and blend the whole thing together with an immersion blender. Peel the remaining apple and cut it into wedges.

Pour into a saucepan 100g. of brown sugar, 1 dl of water and 2 cloves, bring to a boil, add the apple slices and cook over low heat for about 10 minutes until they are slightly caramelized. Let them cool in the syrup.

Sift the flour with the baking powder and add the heads of the 2 cloves crushed and a pinch of salt. Whip the butter with the remaining brown sugar, add an egg and a tablespoon of flour, then add the remaining egg and flour and a pinch of salt. Finally add the mashed apples. Pour the mixture into a baking pan of 20 cm. in diameter, greased and floured.

Bake the cake in a preheated oven at 180 degrees for 45 minutes. Remove it from the mold and let it cool.

Mix the cheese with the powdered sugar and sprinkle the whole thing on top of the cake. Complete with caramelized apple slices and finely crushed cloves. Refrigerate 30 minutes before serving.
